Within about 2&#34; anyway. I will usually cook 1-1.5 min per side. And flip 4 times if its a medium thickish cut. You will notice that when the steak starts to sizzle the fat hits the burner and starts to burn as well. That&#39;s your &#34;these knobs go to 11&#34; moment. Be careful you don&#39;t burn it. <br/><br/>If its an extra thick cut, I will turn the burner down and flip an extra ~2 times.<br/><br/>I don&#39;t often let it rest and will usually just eat it right out of the skillet fajita style. You can though especially if its a thicker cut and you want to give the center more time to cook. Sometimes I will put it on the stove and throw a few fried eggs in the skillet too. <br/><br/>I don&#39;t get great results with this technique and thinner cuts.
