      What a happy (re)discovery. Yesterday I realized I have most of a keg of Altbier on one of my taps. Was so busy the last couple of months working that I had completely forgotten it. Haven’t had time to brew either. &lt;br/&gt;&lt;br/&gt;Tastes brilliant.  Nothing like discovering you have more homebrew than you thought you had.

      It was time to rethink my brewing setup. Now being back to a full time job means I need to make everything as efficient as possible. The pump on the Grainfather G40 is shit and despite my taking it apart and cleaning it thoroughly it stopped after my first test the other day and didn’t work at all today. So my external pump is essential. Ordered three-way T valves and various parts to get this all hooked up properly. Woke up the yeast slurry with a DME wort, chilled and decanted, then in chilled wort from this brew while the main wort chilled to 4°C. Oxygenated the wort and then poured in the starter. Let the temp free rise to 9°C.       Finally landed a job. Working with my old CEO/founder at the next company he has founded. Two weeks to brew some beer so I have some backup kegs as things are going to get really busy. Tomorrow is my first run at an Altbier. And I think I’ll do that rice lager but with Kölsch yeast a few days after that.

      Had a bottle of Taiwan Beer 18 Days unpasteurized that was bottled yesterday (after the long weekend here) and it was fabulous. &lt;br/&gt;&lt;br/&gt;Yes it is a rice lager but to get something that was brewed a few blocks away and then put in the bottle yesterday, unpasteurized, proper cool chain, in a massive city like Taipei is a special treat.

      Transferred my Märzen from the short dip tube corny keg where it has been lagering for 136 days now (brewed on the equinox) to give it time to settle before having some friends over later in September. This is from nearly the bottom of the lagering keg so it is a bit cloudy.       Trying various no alcohol / low alcohol beers lately and this is still my favorite. Do not confuse it with the blue label one made under contract - that one is undrinkable IMO. This one, imported from Japan, is actually better than the regular Super Dry made under contract (also just IMO). &lt;br/&gt;&lt;br/&gt;While Yebisu is forever my favorite macro-brew in Japan I’ve always enjoyed an ice cold Super Dry. Clay cups that can be smashed down and remade in to cups again or worst case just return to the soil. Banana leaves as “plates” is another one of course. India still using natural items for food service and at a scale that is nearly unimaginable. I was hoping India could somehow teach the rest of the world this.

      I’m thinking to try to make hop water. Never tried a commercial version so don’t have a point of reference, but the idea of sparkling, slightly hoppy water is appealing. &lt;br/&gt;&lt;br/&gt;I did do a water kefir with some hop tea once and it didn’t really work - I didn’t get it hoppy enough&lt;br/&gt;&lt;br/&gt;Brülosophy and More Beer articles seems to have some good ideas. &lt;br/&gt;&lt;br/&gt;Anyone else tried making this and have any pointers?&lt;br/&gt;&lt;br/&gt;Also thinking to make a hop tea and mix that with Japanese cold barley tea. &lt;br/&gt;&lt;br/&gt;#HopWater #brewing #hops

But then again, as Noguchi-san can probably understand, I actually enjoy some of the more unique Japanese delicacies that are quite bitter and/or astringent: 酒盗, ホヤ and even the bitterness of certain parts of 秋刀魚 as it gets close to the guts.

There is a brewer here in NZ (Behemoth) who have brewed their beers, including Sculpin.  I used to drink this when back in California as it is really a quintessential IPA and really nice to drink. &lt;br/&gt;&lt;br/&gt;Glad to see it is still alive&lt;br/&gt;&lt;br/&gt;Sculpin is a yummy fish but ugly. かさご in Japanese?
