I would have initially greased the pan and perhaps the underside of the chicken and lemon slices with the end of the butter stick but during cooking place the butter stick on top of the chicken so it melts and flows over the entire flesh. It appears you're cooking open and putting it down on the pan needs a lid to circulate the melted butter and flavorings vapor around the bird.
