"this one speaker always does it and pulls it off" is the "this guy won the lottery so we should all play" argument. And do we think that people whose talk wasn't great because they rehearsed so much would have been better without rehearsal?
a) if that's their process for whatever reason, that's fine
b) it still communicates "you audience are not worth for me to prepare in advance, you get whatever I can come up with in the eleventh hour"
c) it still tells conference organizers: I do not appreciate your conference and the platform you have given me enough to do my work on time, you just get whatever I can slap together the night before.
I know there's also a juvenile "look how cool I am to not do my homework" shtick connected to this method but yeah, we're all not 12 anymore.
