there's a little more to it than just opening channels. you gotta have em sized right and you have to manage the fees and balancing of the channels. but I agree, it's easier than mining, with less initial investment, depending on how many channels and what size. but the amount of profit from an ln node will be small compared to mining. I think they both have their trade offs and that running an LN node is a more accessible way to make some profit.
