#vegan deviled eggs seem to usually use agar-agar (to make gelatin "egg whites") or potatoes.
I tried https://www.bonappetit.com/recipe/vegan-deviled-eggs (I needed to add some potatoes to the "yolk" filling). Not a bad replacement, in terms of having cute, colorful, yummy little hand-held bites for group events that take entirely too much effort to prepare.
If you don't care about presentation - just mash it all together and have yummy, unique mashed potatoes.
