Yes, the sats are in the custody of the mint. It is advisable to set up your own mint or diversify.
You should only trust a mint with the amount of sats you are willing to lose, as Cashu is still in beta, and with most mints, you won't know who is behind them. That's one of the reasons we set up a directory to rate mints based on trustworthiness. The incentive is that they can serve the community, like a Nostr relay or Bitcoin node. However, to be 100% sure not to get rugged by a mint, it is best to run your own.
