Keep in mind they locked in this venue ~6 or 7 years ago, which is why the space was so large.
Catering and other logistics are a balancing act. For events, I have organized, we have to give a headcount two weeks out and then a final headcount a few days out so they can have enough food and staff to both cook and serve it.
You can't have 1000 extra people show up, or you won't have food or seats for everyone.
