Ok #Cooking Mastodon, a chemical puzzle:

My bean spice blend was cumin, paprika, garlic and chili powder. I subbed cinnamon for th chili recently to help with partner's gut problems.

Now the beans seem to stink a ton after a few days, but it's hard to pin down. You'll open the dish washer or fridge and go "wow that reeks" but then sniff again and go "huh no that's just spices nice". WTF?

Also, the beans get, er. Goopy? After s few days? But they're still fine, it's just moisture being wicked out, like there's more starch or something.

Is the cinnamon doing something fucked up, chemically, in there? Causing the beans to break down faster or- I dunno?
