For straight Linux desktop to Linux desktop (I have used it w Windows in the past) NoMachine is, in my experience, by far the FASTEST, easiest to use, and most full featured* remote solution.
*starting w audio support buts there's lots more, incl screen recording
Used in combination with Tailscale there's no need to open ports or configure anything.
Dual 4k monitors OK. Try that w any VNC.
Not open source but it's completely free for personal use.
