Your bitcoin wouldn't be gone in an EMP. You can store your BTC simply by memorizing twelve words. No device needed whatsoever. Yes, you'd need the network to come back up. But the entire history of all transactions is encoded into every block, and so there are millions of copies that would survive and the entire process wouldn't take much more time than getting, say, 10% of the electric grid operational.
