When I was a teenager in Singapore, I went to a bougie school and for a brief period of time, the kids (as in 12 year olds around 1998) were obsessed with going to a place to get potato rösti after school. Things we rarely had: potato! Sour cream!
Yesterday, I had a very sudden desire for rösti. It was so easy to make I feel annoyed I ever paid anyone money to make it for me. I still struggle with potato as a main carb; but I appreciate it now.
