Mini recipe:
- Cut all your vegetables in bite size or smaller
- Weigh the total amount of vegetables
- Add 2 percent of this number in salt
- Mix and massage vegetables and salt together on top of a bowl. You will see some juice/sweat coming out of the veggies.
- In a jar or fermentation crock, pack down this mixture
Use your fist to make sure no air pocket is left.
