Black and white images look better better because they look like they have more entropy. Monochrome imagery even more so. Pixel-art also.
But they don‘t have more entropy per pixel. It‘s just that by making the quantization visible to the human eye they seem enjoyably graspable.
The theory now is: the concept of „the flow“ (sweetspot of the amount of perceived information per time) applied to viewing images is measurable by entropy per image (and not per pixel, meaning that you need to normalize image size first).
