Its not whether or something will centralize. Anything that gains traction like the lightning network will develop centralized, easy to use clients. Its the threat that one can 'do it themselves' that matters more imo.
Almost everyone on here chooses to use a custodial wallet for zapping. But, they could choose to use a completely sovereign setup running over tor and there is interoperability between those two groups exchanging zaps.
