About 50 cloves, rough chopped and mixed into 2 sticks of softened butter and a bunch of fresh thyme. I packed it on the beef last night and let it go all night in the frig. Left it out 3 hours before I put it on. Started it at 450° for 20 minutes then left it on 225° until my meat thermometer reached 120°.
Now it's resting... we're going to eat our soup while it is on siesta.
