I was thinking abut congee, and - stay with me here - Nana’s rice water for invalids, and also her insistence that if you “weren’t feeling well in yourself” then the best thing for you was not-very-sweet rice pudding. Variations on a theme from a different heritage, I think. The rice pudding would often come with the sourest preserved fruit from the Vacola bottles - something really tart. Always worked for me.
