Joplin is an Open Source note-taking application that can handle a large number of notes organized into notebooks.
Evernote users can even import their notes.

I have a FLOSS Joplin app in android that I sometimes use as a scratchpad. Set it up to backup to my NAS box over WebDav to sync btwn my devices. Backs up to clouds too.
I'm also looking at a FLOSS Orgzly app as an alternative. Also can cloud sync. Got it on a NAS box WebDav sync share too.
