I believe this technique was used by the winner in some competition but I am sorry I do not remember the details on where and when that was. They recommended two or three filters actually but I find two of these unbleached filters works well. Because I measure and time everything the result is very consistent.
As far as the two stage method, I think the idea is to produce some of the unique flavors and aromas that are upfront in brewing process because those change over time. Not sure if that is BS or not but I get a good result and have not messed with it.
The Atlas Coffee subscription sends me various coffees and different roasts so I do not get bored.
I plan to augment this with a local roaster that is at farmer's markets here and he does some really unique coffees that are true single origin, that is a single farmer/grower not just a region like the Atlas coffees.
