It’s about establishing trust / confidence. When you’re a major company with established business processes, beholden to consumer protections and such, you can afford to go closed source.
But the only way a lone developer is going to achieve that same level of confidence is by showing the code. Or maybe if they’re super popular and lots of people love them and use their own reputation to inspire trust. But you have to do something at least. Trust isn’t just blindly given
