Pork butt phase 1 progress…
About 9 hours in, first light spritz with apple cider vinegar. Been going at 200° for the last 7 hours (about 170° for first two hours), internal temp 155°.
Now lid closed for another three to four hours before phase 2 (the wrap @ 185°ish). Might occasionally spritz it if it looks dry.

No trimming, just scoring. Seasoned and placed on the grill.
The nice thing about pellet #smokers is how hands off it is. I do miss pulling all nighters at times and obsessing about the details but 95% chill and 5% work is worth it for a negligible difference in taste from a traditional smoker.
Now sitting back while the smoker does its thing and I enjoy watching the rest of the #ufc fight tonight. Oh, by the way, congrats on the win CrisCyborg (npub1wv7…xye0) !
