That was kind of opposite from my experience.
I grew up in Manchester UK and I can always go to the butcher shop asking for cuts I want, precisely cut to the thickness I wanted.
And for years that was not available in Thailand. The closest thing I've come across are wholesale meat dealers who can't even tell which cut is which. Or some 'specialty' muslim butcher.
Beef is often looked down on in modern Thai culture and doesn't get a lot if attention.
It's only just recently that this has begun to change, now it's easy to pick any cut, get anything I want, Even restaurants that would scoffs at me for asking for beef, 'we don't serve that kind of food here', I know adding beef items on their menu.
Beef is seeing a renaissance here and I'm all for it.
