From the wild end of uses: pull a new 1-wire cable with temperature and moisture sensors through the channels using the old cabling, get early warning information of the health of the building. Or just use the old wiring itself, if the connector locations make sense for acquiring the data. 1-wire can be connecter in series and old phone cabling is plenty good for it, unlike for most other uses.
