I did really try that. Substituting different greens, like young spinach, that worked fine. Substituting nuts not so good.

My current method, from a Ferran Adrià cookbook of the food made for kitchen staff, gently boils the garlic first to change the flavor, and gives the basil a ten second parboil, which helps with color.
