Reliable randomness is hard to get without digital electronics of some kind. The candle chips have a ~1kb lookup table that they run through in sequence. Most of them repeat their pattern if you watch carefully, though some run it through a simple hash function or PRNG of some sort. All in dedicated hardware of course.
