You'll have to back up what you need manually to a USB stick, install GrapheneOS (web install, super easy), choose your method to Obtain apps (PlayStore, Aurora, GitHub/ Obtainium) then copy what you need over.
I'd suggest keeping it simple don't install apps you don't need try get by using Vanadium (GrapheneOS's browser) where possible.
