"content": "Pork butt phase 1 complete!\n\nNo trimming, just scoring. Seasoned and placed on the grill.\n\nThe nice thing about pellet #smokers is how hands off it is. I do miss pulling all nighters at times and obsessing about the details but 95% chill and 5% work is worth it for a negligible difference in taste from a traditional smoker.\n\nNow sitting back while the smoker does its thing and I enjoy watching the rest of the #ufc fight tonight.
