Am I right that the public electrum server does see what addresses you're scanning for? So it's private to outsiders but not to that server. Running your own full node of course would not have this issue.
Another thing to keep in mind is to not combine the utxos when spending, at least not consolidating all of them, unless using coinjoin/payjoin.
