It is unfortunate that NIP-57 isn't widely supported by open source wallets yet.
I do not recommend WOS. If someone is using it for receiving zaps, use it ONLY for that. Don't have more than $25 worth in it and definitely don't use it for everyday use or for stacking sats.

The bare minimum requirement for a bitcoin wallet is that it is open source.
If a complete and total noob needs to use lightning network for payments, I would probably send him/her to Muun Wallet.
My favorite on-chain wallet is Green.
My favorite lightning wallet is Phoenix. It's very easy to use, but you do need to open a channel first by sending some sats to your on-chain address. Probably not ideal for someone starting from zero.
For receiving zaps on Nostr I would use anything that supports NIP-57. I don't care if it's custodial or closed source as long as you know it's ONLY used for receiving zaps.
Wallet of Satoshi is idiot-proof but I would hate for someone to start using it as a savings account. They must be warned that it should only be used for very small amounts.

Yes you can zap using Iris.
There's something I don't like about Iris though. User experience isn't my favorite.
I use Snort on desktop and Amethyst on Android. But Amethyst has been super buggy lately.
We are early days in Nostr. More clients will come in the future and the current ones will improve.

I have managed to persuade most of my friends to buy bitcoin, but only one of them became a maxi.
The rest still see bitcoin as some form of investment.
It's frustrating. Almost nobody understands bitcoin and almost everyone thinks it's risky (they still "diversify" into other things).
Hyperbitcoinization isn't happening anytime soon. I predict it will happen around the year 2045.

It's not so much about relays being "junk".
It's more a question of where do you want to hang out?
You can join a private relay where only you and your friends exist, or a paid relay where only people who paid exist, or a public relay where most people go to.
Or maybe a combination of those. Maybe you only want to read global posts from paid relays but you still want to participate in public relays.
Read about how Nostr works. It's very different from the social media we're used to.

MY LIST OF RECOMMENDED BITCOIN WALLETS:
This is my opinion only. There are hundreds (if not thousands) of bitcoin wallets out there. With that said, these are the ones I'm sticking with at the moment.
Before we begin, I would like to say one thing: I don't believe you need a hardware wallet if you have less than 0.10 BTC. Hot wallets in general are pretty safe as long as they're open source and/or reproducible. Having people buy hardware wallets when all they have is $800 worth of BTC or so is overkill IMO.
So don't bother with a hardware wallet unless 0.10 BTC represents a lot of money to you and it would be devastating to your well-being if you lose that money.
If you have much more than that, I would probably go with something like 95% cold storage and 5% mobile wallets for regular spending and receiving bitcoin.
With that said, these are the wallets I recommend...
Green Wallet (mobile): Developed by Blockstream. The ideal on-chain wallet for someone starting out. It is fully open source. Allows you to connect to your own node. Allows you to have several wallets (seeds). Very modern and intuitive UX. This is the wallet I have my friends and family members install when they want to begin stacking sats. So if you simply want to buy and hodl, start here.
Samourai Wallet (mobile): For intermediate/advanced users. It's a privacy-focused wallet. On-chain only. Fully open source. This is the wallet you use once you start going down the privacy rabbit hole. It lets you mix your coins with other people coins to eliminate traceability. It spends your coins in a way that make it harder for others to trace you. If you spend your bitcoin regularly and you really care about your privacy, use this wallet.
Phoenix Wallet (mobile): A self-custodial Lightning wallet. This is the one I use for lightning network. Amazing user experience. Intuitive. You control your own keys. Fully open source. Very up to date with bitcoin development. Fast and sexy. What else can I say? Try it out, it's pretty awesome.
BitBox02 Bitcoin Only Edition (hardware): My favorite hardware wallet, the one I recommend to all my friends. Very well designed and easy to use. The developers are extremely transparent and they put a lot of effort to make sure it's as secure as it can be. It has the "anti-klepto" feature which protects you against the nonce covert channel attack. You can create your own seed using dice. It simply ticks all the right boxes for me. The only thing I don't like is how they force you to use an SD card when setting it up. I prefer to store the 24 seed myself.
SeedSigner (hardware): For more advanced users that want to minimize trust as much as possible. It's a DIY wallet, which means you build it yourself using generic hardware. Completely airgapped. Fully open source. Great project overall. The best option if you don't want to "trust" any company. Also good if you want to avoid giving your personal information when purchasing a wallet online.
Sparrow Wallet (desktop): Oh boy, this one is something else. This is the wallet software you use along with your hardware wallet. Absolutely magnificient. Allows you to do pretty much everything, from managing your UTXOs, mixing coins, using multisignature, etc. So it doesn't matter if you have a Trezor, a Coldcard, a BitBox02 or any other device, you simply link it to Sparrow Wallet and voilá, the power is yours. Don't use the software that comes with your hardware wallet (for example, Ledger Live App). Use Sparrow Wallet. It's for intermediate/advanced users, but it's totally worth it. Watch YouTube tutorials if you need to.
That's it, that's the list.
Honorable mention to Zeus Wallet for those that run their own lightning nodes and want complete control and also to Trezor Model One for those that want a hardware wallet but aren't tech savvy at all (ie: boomers).

PS/ Before you ask me about Coldcard, I think it's a good option, but it's just not my favorite. It has way too many features that most users don't need. It also has a higher learning curve for the average person getting into bitcoin.
PS2/ I used to recommend Muun Wallet to beginners, but I don't do that anymore. Their lightning network implementation is buggy and problematic. Their backup system has 3 steps and you must do all 3 if you want true self custody. I love their UX and how they make it easier for everyone to use both on-chain and lightning, but I just don't feel it meets the requirements I'm looking for.

I'm all in on bitcoin.
I don't own any stocks, bonds, precious metals, real estate or other cryptocurrencies. I only have just enough dollars to cover my short term expenses. Everything else is in bitcoin.
I don't diversify. Diversification doesn't make any sense. I don't own a house either. I sold my house last year and used all that money to buy bitcoin. I now rent.
This is the way.
You might think that I'm crazy. That's okay. I'm doing very fine and I'm happy.
I'm a bitcoin maximalist.
What the hell is that you might ask? Well, there is no official definition for bitcoin maximalism. It can mean different things to different people.
With that said, I believe I can give you a definition that will satisfy most maxis.
Bitcoin maximalism is the belief that bitcoin is the best form of money that currently exists, outside the control of governments and banks. Therefore, putting your money into anything other than bitcoin makes no sense.
The above is reinforced by the fact that bitcoin continues to outperform pretty much everything, further removing the need to "invest" in anything else.
Bitcoin maxis won't bother buying stocks, bonds, funds, certificate deposits or any other form of modern investments. The only reason why people feel the need to buy these things is because they are stuck in a monetary system that forces them to. They have to choose between investing or losing their purchasing power over time.
Toxic bitcoin maximalists are maxis who attack everything that is not bitcoin. All maxis are toxic to some degree. It depends on their personality and their conviction. I personally consider myself moderately toxic. I like to make fun of other cryptocurrencies and call out people for buying that crap. My friends know that I'm a maxi so they would be embarrassed to admit in front of me that they own coins other than bitcoin. I have managed to save most of them from the "crypto world". They're not maxis, but at least they're bitcoin only.
Maxis have high distrust in the system and tend to be kind of rebels. People who trust governments or are politically inclined to the left are unlikely to become maxis. They are more likely to see bitcoin as some form of investment, which is perfectly fine. Bitcoin is for everyone.
Some people use the terms "bitcoiner" and "bitcoin maximalist" interchangeably. Personally I like to use the word maximalism to further emphasize the ideology I support. I tell people I'm a maxi so that they don't even bother trying to persuade me to buy other stuff. Can you be a bitcoiner and not a maxi? I suppose. Maybe you fully support the ideals behind bitcoin, but you also own a little bit of gold or a couple of stocks. However, the deeper down the bitcoin rabbit hole you go, the less you will want to put your money into anything other than bitcoin.
Now, being a bitcoin maxi doesn't necessarily mean you want to get rid of the state. I'm personally quite indifferent to the existence of governments, as long as they don't control the money. I simply want people to be free to use whatever money they want without it being devalued and censored by the government. In other words, most bitcoin maxis simply want to separate money from the state.
You can still be a bitcoiner if you believe the state is a good thing for society. In a world where bitcoin is money, we can still pay taxes and have governments take care of stuff. Here's the main difference though: When governments don't control money, they can no longer abuse us the way they do now.
Of course, many bitcoin maxis are either libertarians or anarcho-capitalists, but that doesn't mean you have to be.

HOW TO TAKE CARE OF YOUR BITCOIN PRIVACY:
Privacy is a fundamental human right. If you use bitcoin carelessly, other people (strangers, companies, governments) will know every movement you make and how much money you have.
There are 5 main ways to improve your privacy:
1) Never tell anyone how much bitcoin you have: I know this can be tempting. But as soon as someone knows how much bitcoin you have, they can simply force you to give it to them by putting a gun to your head, kidnapping your daugther or sending you to jail until you give away your money.
2) Run your own node (and use it): If you have a hardware wallet and connect to Ledger, Trezor, or any other company's node, you're basically sharing with them every move you make and how much money you have. This is absolutely crazy. Please learn how to run your own node.
Once you have your own node, you need to start fresh with a new seed, as Ledger or any other company could still have your XPUB from the old seed and know your every move forever and ever.
3) Don't buy KYC bitcoin: Stop giving your government ID to centralized exchanges or companies. This is nuts! Try to find bitcoin communities, Whatsapp groups, Telegram groups, decentralized exchanges, P2P apps, etc. If you look hard enough, you will eventually find ways to buy bitcoin (even BIG amounts) without giving your personal information to companies.
4) Keep your KYC and your no-KYC bitcoin separate from each other: If you do end up having some KYC bitcoin, please make sure to not mix those UTXOs with your no-KYC ones. If you mix them up, then the companies where you bought your bitcoin could trace you down, figure out approximately how much bitcoin you have, etc.
Use Sparrow Wallet to take care of this. Mark your UTXOs with labels. Use a block explorer (from your own node) to trace down those UTXOs you can't find. Move your KYC bitcoin to other wallet or passphrase to avoid mixing it up with your no-KYC. Etc.
If all of this is too complicated or you have way too many UTXOs you can always start fresh and have a new wallet exclusively for your future no-KYC bitcoins.
5) Use coinjoins to prevent people from tracing down your movements: The blockchain is public. If I sell you 10 BTC, I can then keep an eye on that transaction and see if you move it around, how much you move around, etc. By using coinjoins you make it difficult for others to trace your movements. Use Samourai Wallet, Sparrow Wallet, or other similar wallets.
I've heard bad things about Wasabi, so I would be personally cautious about them.

I store my Nostr private key in my password manager (Bitwarden) so I can access it anywhere.
Probably not safe enough but I can't think of anything else at the moment.
