Python works, but I remember seeing a python gtk app which would freeze up when processing stuff in the background (maybe it was flatseal, I dont remember for sure). Seems to be a thing were you have to be careful about async stuff and threading with the gtk main loop. If thats not a concern for you, than yeah go for python.
