Whether one has unilateral control of funds or not is the most important concept to understand here because there's real world implications for this established concept.
And it's not your Bitcoin anyways. Quit calling ecash Bitcoin. It's traded like any currency. You talk about confusion, the only confusion here is that you've conflated two different currencies as being the same thing.
Since when is giving up your Bitcoin with no guarantee to get it back ever called non custodial? Have you heard of an exchange or trade? You lose the claim of Bitcoin the second you swapped it for a different currency.
