I wing things in the kitchen, but can tell you what I add -- vinegar, a pinch of vit. C powder, a bit of glucose powder, stevia powder (very tiny amount - it's super sweet) ... plus water & tomato powder of course. I add the glucose as it neutralizes the stevia aftertaste IMO.
I make small batches and they all vary a bit, but that makes it interesting for me and helps to hone my cooking skills.
You can probably find a recipe online and adjust the ingredients to suit.
