The "Open with..." list is not hardcoded but based on NIP-89 metadata. For 1) you can recommend/favorite apps in
https://nostrapp.link/ and clients should show them as the first option, search would be nice too in case you don't have a favorite. 2) is the data apps are using to create the relevant URLs so it's in nostr already.
