It has proven really difficult to convince merchants like supermarkets, gasoline stations, etc. to start accepting bitcoin. They simply don't understand, and if they slightly do, their conclusion is that bitcoin as an asset is too volatile. They want price stability. That is where stablecoins come in. With protocols like taproot assets these can be minted on the best blockchain which is Bitcoin. And even if they don't eventually start accepting direct bitcoin payments, they are using bitcoin as the settlement layer without even knowing it.
