Chunky Beef Stew 🥩🍲
Ingredient List
1 large onion, diced
6 cloves garlic, minced
3 tablespoons butter
1 lb beef
stew meat
1/4 cup corn starch
Salt & pepper
Italian seasoning
Parsley, fresh handful
2 stems rosemary whole
3 carrots, chopped
3 stalks celery, chopped
1 lb potato, chopped
1 1/2 cup pinot noir wine
6 cups beef broth

• saute onion in butter until soft in large enamel cast iron pot
• dredge beef in corn starch, salt, pepper & italian seasoning
• add beef to pot when onions brown
• once beef is browned on all sides add garlic
• turn up heat and deglaze pot with red wine, scraping the brown bits off the pot
• pour in beef broth
• add carrots, celery, potatoes, rosemary & parsley
• bring to boil
• simmer 15 minutes until potatoes are soft
• salt and pepper to taste
Always better the next day!

Thick & Chewy Chocolate Chip Cookies 🍪 🥛
Ingredients List:
2 cups plus 2 tablespoons of unbleached all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon table salt
1 1/2 sticks unsalted butter, melted and cooled*
1 cup packed brown sugar
1/2 cup granulated sugar
1 large whole egg
1 large egg yolk
2 teaspoons vanilla extract
1 1/2 cups chocolate chips
*melting and cooling the butter makes all the difference in this recipe!

• preheat oven to 325F with rack centered
• line cookie sheets with parchment paper
• melt butter and set in fridge to cool but still liquid
• whisk flour, baking soda & salt in medium bowl
• in stand mixer with paddle beat butter and sugars at medium speed until smooth, 1 minute
• add egg, egg yolk & vanilla and beat on medium low until fully blended, 30 seconds
• scrape bowl as needed to incorporate
• add dry ingredients in quarters
• blend until combined, 30 seconds
• mix in chocolate chips
• work fast so as to not have dough warm
• divide dough into 18 portions about 1/4 cup each
• roll into ball and then tear ball in half
• now push two pieces back together with ruff edges facing up
• this makes those rustic craggy cookies!
• Place cookies on sheet 2 1/2 inches apart
• Bake 7 minutes then rotate for 7 minutes
• Bake until the cookies are golden, either lightly browned edges but the center is still puffy and soft, 15 minutes total
• Cool on the cookie sheet
These are the best cookies! Soft and chewy for days… if they last 🤣

Cozy Potato Corn Chowder 🌽
Ingredients List:
1 stick butter, cubed
1 shallot, diced
1 large onion, chopped
1/4 cup parsley, chopped
2 cups frozen corn
6 large potatoes, chopped
1 quart water
1/4 teaspoon dried dill
1 quart milk
1 cup heavy cream
1/2 teaspoon dried thyme
Salt and pepper to taste
*I also like to fry a little bacon and dice it up to add as a topping 😘

• melt butter on low heat in large pot
• add shallot, onion, corn & potatoes
• cook uncovered until onions soften
• cover and cook on low heat for 30 minutes, stirring frequently
• add water and bring to boil
• simmer uncovered for 30-45 minutes to make your house smell delicious
• make sure potatoes are cooked
• add milk, cream, dill, thyme, salt & pepper
• simmer for 15 minutes to reduce and thicken a bit
Always excellent the day after with some crusty bread to dip 🥖

Quick Buttery Dinner Roll 🥐
Ingredient List
1 Cup Water
2 Tablespoons Butter melted
1/2 Cup Whole Milk
2 Tablespoons Honey
1 Tablespoon Dry Active Yeast
3 1/2 - 4 Cup All purpose flour
1 Teaspoon salt

•Mix water and melted butter in microwave safe dish
•Stir in milk and honey
•Microwave for 1 minute or just until fluid is 110F
•Pour into kitchen aid mixer bowl
•Sprinkle yeast into mixer bowl
•Gently stir in
•Let yeast activate for five minutes or until foamy
•Add dry flour and salt into liquid a half cup at a time
•Mix on medium with hook attached until dough is smooth and pulls away from the bowl
•Add 4 cups of flour max
•Dough should be just sticky to the touch
•Place dough in greased bowl and cover with damp cloth to let dough rise for 15 minutes in a warm spot
•Punch down dough and shape into 15 equal round balls
•Place buns into greased 9”x13” bake dish
•Cover again and let rise for 15 minutes in warm spot
•Brush tops with butter
•Bake uncovered at 400F for 15-20 minutes

1/2 lb gouda cheese cubed
1 stick of butter

•Dice vegetables and herbs
•Cube gouda
•Saute vegetables in butter in large pot
•Gently salt and pepper
•Add herbs
•Add dried fruit & nuts
•Add stuffing bread
•Lightly pour in vegetable stock over bread
•Gently fold ingredients together carefully blending so as to keep bread pieces intact
•Fold in gouda cheese
•Fold in parsley
•Coat baking dish with butter

4 egg yolks

1 tablespoon zest of lime
2 tablespoons room temp butter

•Temper cornstarch mixture by slowly stirring in a 1/2 cup of hot milk mixture
•Watch milk mixture for first hints of boil and keep stirring
•Once milk mixture just starts to boil, pour the tempered cornstarch mix into the milk mixture
•Stir vigorously as the mixture thickens and turns into a custard
•Turn off heat
•Stir in butter
•As mix begins to cool, vigorously stir in lime juice and zest to prevent any curdling
•Pour custard into pie crust
•Cover with plastic wrap to prevent a skin forming
•Refrigerate until custard sets
•Decorate with whipped cream at time of serving

10 Tablespoons butter cold, cut into small pieces

•Pour flour into food processor
•Add cold butter
•Blend
•After 1 minute, add 1/2 tablespoon of ice water at a time until dough forms a ball
•Remove & form dough into ball, flatten and wrap in parchment paper
•Refrigerate 1 hour before rolling out
•Roll out to fit pie dish on a silpat mat
•An 8” pie needs to be rolled out to a 12” circle
•Place pie dish on top of dough
•Flip over in one smooth move to get crust into pie dish
•Shape the dough into the pie dish and pinch edges ensuring no cracks
•Prick dough with fork lightly
•Place parchment back on dough and fill with dry beans to act as weight
•Refrigerate dough until ready to bake
•Bake at 375F for approximately 20 minutes.

10oz of ginger snap cookies

•Melt butter
•Pulverize cookies in food processor
•Add butter and blend evenly into cookies
•Dump mixture into glass pie plate
•Form crust edge first with fingers by lightly tamping mixture
•Smooth out bottom of crust with backside of measuring cup or spoon

•Bake in oven for 10 minutes at 350F

Homemade Savory Crackers 🌾
1 ¾ cup plain white flour
1 teaspoon baking powder
½ teaspoon salt
45 grams finely grated parm/cheddar
1 teaspoons black pepper
½ cup water
⅓ cup extra virgin olive oil

•Preheat oven to 230C/450F. Place 2 baking trays in oven to heat.
Make the dough:
•In a bowl mix flour, baking powder, salt, cheese and black pepper.
•Add water and extra virgin olive oil. •Mix with a wooden spoon until the dough comes together.
•Turn onto a work surface and knead gently for a minute or so until smooth.
How to roll out the dough:
•Cut into four pieces and run through pasta roller until long thin slabs
Or
•Cut into 3 portions
Take one portion of dough and roll out on non stick baking paper dusting the surface with a little flour if it is sticking.
Roll out very thinly. About 30cm/ 12in round.
•Be sure to roll the dough very thinly to ensure it cooks quickly and becomes crispy.
Brush dough lightly with extra virgin olive and sprinkle with flaky salt.
How to bake:
•Bake 10-12 minutes or until crispy and lightly browned.
•While first cracker is baking, roll out the second and third portions of dough and repeat baking.
•Allow to cool before breaking into smaller pieces and serving with cheese, dips or as a snack.

1/4 very cold water
Juice of 3-4 lemons
2 tsp curry powder
1 tsp cumin

Fantastic Snacking Nuts 🥜
3 cups raw mixed nuts
2 tablespoons butter melted
2 tablespoons real maple syrup
1 tablespoon brown sugar
2 tablespoons fresh rosemary diced
2 teaspoons cardamom
1 teaspoon paprika
1/2 teaspoon cayenne
1/2 teaspoon salt
1/2 teaspoon pepper

• Mix maple syrup, brown sugar, paprika, cardamom, cayenne & melted butter
• Pour over nuts in a bowl
• Toss
• Add rosemary, salt & pepper
• Spread on parchment lined baking sheet
• Bake 10 minutes at 350F
• Remove, flip and bake for 5 more minutes
• Allow to cool if you can 🤣
• Add salt to taste.
Always taste everything as you cook!

Thanksgiving Cranberry Sauce 🦃
1 12oz bag fresh cranberries
1 cup sugar
1/2 cup water
1/2 cup fresh squeezed orange juice
1 teaspoon vanilla extract
1 cinnamon stick
2 cardamom pods
1 star anise
