Lnmarkets. It connects to my account with their API and uses deposits, withdrawals which are ln payments. It's very neat because you can run a USD mint without having to KYC.

Dismissing this problem as one that will fix itself is kinda naive to me.
Bitcoin nodes basically only do one thing: validate blocks. That's why anybody can run them. That's why the decentralization works. They require low processing power, low space. People don't need an incentive to run them (hell I ran one on a 13 year old PC with a Pentium and some additional HDD slapped on)
Nostr relays don't have a set limit to their applications (literally "AND OTHER STUFF"). Basically, they could be doing anything at one point. Especially with the pace at which things are developing.
Right now people run relays because they like to and they might even be relatively cheap (I don't know), but at some point it might become so burdensome that they would need a revenue model. And few people will use paid relays.
You could end up with a situation like Tor, where 2/3 of the network is in the hands of three letter agencies that don't mind doing all kinds of nasty shit.
Anyway, just my opinion. I hope I am proven wrong.

With cashu there's always been a dilemma when sending ecash to someone: did they claim the payment?
Sure a wallet can ask the mint if a certain set of tokens were spent, but that creates a link between the sending and receiving wallet. It's a leak of information that loses you privacy.
A first solution, although maybe impractical, would be to let the mint stream the information about all the spent tokens to clients that request them (through apposite WebSocket endpoints).
So If I am a wallet and I have just sent some e-cash to someone, I can connect to the mint and "listen" until I am satisfied (until I know the e-cash was claimed).
This could put some pressure on the mint and it's not clear to me if it could be used to perform some DoS attack.
A better approach could leverage Nostr!
A mint with that advertises its associated `npub` on the `/v1/info` API endpoint could then regularly publish notes with all the information about freshly spent e-cash.
Clients would just have to query for notes with a `p` tag referencing the `npub` of the mint and look for the e-cash they just sent. Easy.

Nope cashu is single custodian.
But if people are gonna be hooked on stablecoins for convenience and price "safety", then they might as well get hooked on USD e-cash, instead of Tether.
You get more privacy, basically free transactions and when you redeem, you get an equivalent amount of sats.

I think Cashu android/iOS wallets would benefit tremendously -in terms of UX- from integrating NFC payments.
Normal people don't want to copy and paste a string of text. The best they can do is scan a QR code on the device of the merchant, but that's not how it works with ecash because the merchant needs to scan the customer device in order to get the money.
Right now you can either pay through nostr or you have to explicitly input the amount on your device and show the QR to the merchant.
Other than being inconvenient for the majority of people, you also have the potential for errors if they input the wrong amount etc...
With NFC, a merchant could simply create a request for payment, the customer wallet would simply ask for user confirmation and then communicate the ecash to the merchant's wallet. Less room for errors, easier payment.

Some weeks ago I came up with a crypto hack that would let cashu wallets sum up unblinded signatures and the mint would still be able to verify them (https://github.com/cashubtc/nuts/issues/140).
So the wallet can just strip the unblinded signatures from the single proofs and just specify a "cumulative" blinded signature.
Today I managed to make it work in my branch: https://github.com/lollerfirst/nutshell/tree/aggregate_proofs .
You can send compressed tokens with `cashu send <amount> --aggregate-proofs` or `cashu send <amount> -g`
Generally, I found aggregate proofs to be ~30% shorter than vanilla non-DLEQ tokens.
This scheme modification has not been verified so proceed with caution, please <3
