Very labor intensive. I learned from an old timer that made syrup into his late 80's, you don't always have to boil hard. I boil hard when I am home and watching. I smolder and steam when I am sleeping or at work. Here is 4:45 this morning when I got up. The sap level went down a couple inches in pan, and tank level went down 1/3. All told about 50 gallons water boiled off while I slept. I can shut evaporator down pretty tight and am showing the coals I'm left with in morning. I think you can, it just doesn't have as much sugar in sap, you would just boil longer. I made some syrup from walnut trees for fun and it was 80 gal sap for 1 gal syrup and it was great. Sugar maple is about 45 gal sap per gallon. So big leaf maybe closer to the walnut amount.
