There's a place near me out in the suburbs which list the price tags on the shelves years ago. I asked about that and the chap said "just bring it up and ask", which is a solve for one item and one item only. And it subtly pressures you to buy it.
I bet if you go in and go back-and-forth for a dozen items eventually you'll get asked to leave... at which point you could raise the problem of the missing shelf labels. :)
