Last Notes npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…2wsh Apparently true jasmine will apparently not survive freezing weather, so they probably are not unless you've got them in pots and bring them inside when it gets cold out. npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…2wsh do they then remove the flowers before packaging the tea for sale? It turns out my jasmine plant is not a true jasmine and is not suitable for tea making npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…2wsh jasmine tea is tea flavored with the jasmine flowers. The base tea is typically black, green, or tea from the leaves of the tea plant (Camellia sinensis), though it could be any tea base. I don't think you ever get _just_ jasmine flowers alone as a tea. npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing Our Jasmine plant has made flowers for the first time! We planted it like 4-5 years ago so this has been a long time coming. Probably helps that the new fence lets sunlight through. Now I need to look up how to properly make these into tea. #Gardening #Jasmine #Tea https://files.mastodon.social/media_attachments/files/116/687/644/827/733/351/original/bf89f3599dd1349c.jpg npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing I want to make sourdough bread, but I'm also lazy and impatient. So I just had an idea of making pseudo sourdough bread, where I add sourdough culture (or maybe discard) to a dough, but also use quick rise yeast and make it like a quick rise yeast bread, still getting flavor from the sourdough starter but not waiting ages and hoping to time it just right when the dough is at the proper amount of rise to bake, not over proofed, etc. Any thoughts? #Baking, #Sourdough #Fermentation #Lazy npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…rdan @nprofile…83cq in all seriousness, I bet chili would benefit from the incorporation of some miso, boost that umami. npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…rdan @nprofile…83cq I heard if you add beans to chili it's not chili anymore, so I don't think that's possible 😔 npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing was looking at making miso (thanks @nprofile…83cq ) because I've had some koji rice I grew sitting in my fridge for like a couple years now... and my brain is going into weird places. At first it was like: can I make miso with beans other than soy? That answer is yes. And now it's like: let's make southwestern miso with canned seasoned black beans. #miso #fermentation npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing We compost and we have a stainless bin in the kitchen that gets unloaded into the pile when it fills up periodically. Also, next to the tea/coffee station we have a wide bowl to collect spent tea/coffee grounds, this is frequently just kinda dumped off the back deck onto the garden beds below because lazy. Also some veggie scraps end up in the tea/coffee bowl because lazy, and then those things also go off the deck. I found this onion butt regrowing in the garden bed yesterday. #Compost https://files.mastodon.social/media_attachments/files/115/532/517/627/893/691/original/68b262488e0e44e8.png npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing Today is Lefse making day! I recently made a gin-adjacent spirit with leyland cypress boughs instead of juniper berries (the impetus being to create a 100% homegrown "gin") and it turned out quite well. Though the evergreen flavor is definitely not gin/juniper it works well everywhere gin works. So you may just want to explore various evergreen boughs. npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…why8 those both sound interesting. Flip a coin. npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…xjgh I get around that problem by not moving the beer to a secondary. At the home brew scale there's no need for secondary. The dormant yeast won't rupture because of the pressure caused by the weight of 20 liters of beer on top of it. npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing It's incredible the difference in flavor between the bottled saison and the exact same beer on tap. Carb levels are different for sure, but even drinking the last of this bottle two hours later it's still so different. Maybe I should try naturally carbonating the keg next time? #HomeBrewing #Beer #Saison #WildYeast https://files.mastodon.social/media_attachments/files/114/170/480/637/140/704/original/9b630362df990edc.jpg npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing My attempt to revive the wild yeast I collected from the Bahamas that's been lying dormant in a jar in my fridge for 8-9 years seems to have succeeded. #WildYeast #HomeBrewing https://files.mastodon.social/media_attachments/files/114/116/366/400/251/835/original/090215e3a6d5bf3b.jpg npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing It's too nice out to not sit in the sun and drink some saison during my lunch break today. #beer #saison #WildYeast #HomeBrewing https://files.mastodon.social/media_attachments/files/114/077/914/674/348/816/original/aafbef6dc5b49288.jpg npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…xjgh mostly just use premixed stuff we purchase npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…xjgh I'll have to try this. npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…xjgh dry roasted or cooked in oil? npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing Any suggestions on what style of beer to make with kernza as ~15% of the grain bill? Once this is mostly thawed (tomorrow sometime) I'll add some water and about 4.5kg/10lbs of sugar. I'll let it ferment with whatever wild yeast is on them. This usually works out just fine and I end up with a dry wine of around 12% #WineMaking #BlackberryWine https://files.mastodon.social/media_attachments/files/114/049/562/345/446/032/original/0e2c91363221371d.jpg npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…xjgh I think it's a reasonable substitute. From what I gather, the juniper is used partially because of its great abundance in the areas where these beers are made. npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…xjgh yeah, we don't have common juniper growing around here, so I used Leyland cypress, which I've used quite a number of times in beers and it gives a good flavor. I wrote about it here: https://mutedog.beer/traditional-maltol/ npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing @nprofile…xjgh I brewed traditional Norwegian Maltøl and it ended up at 13.8% with Hornindal Kveik npub1a9a55g8vge6xrtr9xdkedsqhehx0svjlatk4y82m4xmudcyuzjnqdhat5t Mute Dog Brewing Hey, look at that, The Granddad's Bluff yeasties got happy! Hopefully I have enough string to tie all these corks. I crammed my bouncer filter full of a copper scrubber thingy to help remove some sulfur from the beer.
