I don't know that I have any good recommendations, but ever since I started my phd, I've kept a diary in an org mode file (i.e. in an outliner).
A typical daily entry is a node in a (very wide) tree with a list of tasks that I achieved (or didn't), with subtrees that contain thoughts on anything that is more than a todo item, e.g., notes from meetings.
I generally keep a top level item which consists of a "what I'm going to do next" list.
I *sometimes* add a metadata tag for various items, but the purpose of my document is slightly different than what you are asking for.
Namely I need
1) a document that can get me up to speed quickly on what I was doing last, and
2) proof that I didn't waste my day.
In theory I could use org modes refiling stuff to organise things in a more topical manner, but I haven't found the need to (yet)

If all goes well, I'll be graduating as Dr. CiH later this year, so if you see any good postdocs in categories, types, computability, logic, etc. feel free to ping me

Your use of only flats has prompted one of those niggling annoyances back into my mind: why is the flat 2 called the minor 2nd when it doesn't appear in any of the three "normal" minor scales.
I assume the answer involves the phrygian mode

As a kid I always resented that it was dark when I went to school, the sun was up while I was indoors, then it was dark again when I went home
