For me it's in Settings > Privacy > Advanced, at the bottom of the menu.
And when I check the messages I sent to people, it looks like they were delivered using Sealed Sender.

I haven't looked into how it works (so I don't know if it's good enough), but I think they have "masked senders" to prevent metadata snooping of who is sending messages to whom

wtf is up with Flathub calling X11 "legacy windowing system" and marking apps with X11 support as "unsafe".
I know GNOME likes role-playing as the sole owners of the Linux ecosystem, but it's not a good look to push their opinions on an otherwise neutral marketplace.

KDE Neon is such a good laptop distro, really gives you "just works" feelings. I still prefer Arch on my desktop, but I think KDE Neon is the closest thing to MacOS level install-and-forget on Linux.
