The AI features since the first Tensor chips by Google are functional in GrapheneOS and enabled by default, but are able to be disabled.
The AI features *however* are only used in Google apps which require Google Play Services (hence need for a Google account).
The AI features are baked into the Google Tensor chips, the ultimate black box, hence Google controls access to the API with an iron fist (just like Apple :)

Not likely to be so fast as GrapheneOS also contributes to Android Security.
The bigger issue is the Pixel hardware, but we have a path out there if we can get scale.
So if Google does something breaking, and then breaking in hardware, could fork the software and then have hardware with control.
