I used store yeast, but not quick rise - regular Fleischmans. I don't have a stand mixer, so the most labor intense part was mixing the initial flour and water with a bread whisk in a bowl, keeping hydration low. I pitched yeast dry straight from the fridge and after an hour, stretched it and added honey and various other spices. Very good flavor. My wife approved and she's not a wheat bread person.
