I know that I can cut back the sugar, but I don't know about the oil and eggs. I'm thinking about using Mark Bittman's basic muffin recipe and just adding the carrots, apple, raisins, walnuts and coconut to it. That one only uses 3 tablespoons of oil and 1/2 cup of sugar and one egg. It also has some milk.
