Just finished writing the Bitcoin Food Manifesto! 🚀🍽️ It’s not just about connecting Bitcoin to food—it’s a roadmap for local communities to reclaim their food systems. The goal is to adapt the manifesto to fit specific local conditions while sticking to key principles: empowering neighborhoods, fostering community resilience, and creating food economies that are transparent, fair, and independent.
Over the next few days, I’ll be posting each point from the manifesto, breaking it all down. Let’s build a future where we know where our food comes from and support the people who grow it! 🌱💪

🍷 A Tale of Wine and Money 🪙
Just published "Watered Down: How Your Wine Cellar and Your Wallet Tell the Same Story"
During dinner with a friend defending "healthy inflation," I realized the perfect analogy: monetary expansion is like watering down fine wine.
A good bottle of wine, like sound money, gets better with time. Each year adds complexity, depth, and value. But when you print money, you're doing what a shady restaurant owner does by adding water to wine bottles - creating more quantity at the cost of quality.
And Bitcoin? It's the perfectly sealed bottle that can't be diluted. Like that rare vintage in your cellar, its scarcity is guaranteed. HODLing is just cellar aging for the digital age. 🍾
Time rewards patience in both wine and money, but only if you don't water them down.

Running a restaurant during the 2023-2024 economic turbulence in Argentina felt like cooking on a stove where the heat kept changing. Inflation, peso volatility, and shifting policies forced us to innovate just to survive.
In my latest piece, I share how Bitcoin became a crucial ingredient in my financial strategy. It's not about replacing the whole system but adding resilience to the mix—like a secret spice that keeps your recipe balanced, no matter the chaos.

🧠 The Quality Principle: Pure Energy in Food & Money
Whether fueling our bodies or our economies, quality matters. Just as whole foods give us sustainable energy, sound money like Bitcoin provides a stable foundation for lasting value. 🍃💸
Processed food is to our health as fiat currency is to our wealth—empty, artificial, and compromised. In contrast, Bitcoin is like organic food: real, unadulterated, and rooted in natural energy. 🌱⚡
The parallels are profound. Every choice for whole food supports personal vitality and sustainable systems, just as every choice for Bitcoin strengthens economic resilience and fair value.
Our future’s strength lies in these simple, aligned principles: purity, energy, and honesty.

In a world flooded with fast food and processed meals, it's time to reclaim REAL value in what we eat. Real food isn't just a product—it’s a connection to the land, the farmers, and a sustainable way of life. 🌱
When we buy fresh, local ingredients, we’re supporting hard-working farmers and preserving our planet. And here’s where #Bitcoin comes in: it lets us make direct, value-driven payments, cutting out the middlemen who drain profits from the people growing our food. 💪
Each satoshi spent on real food supports a food system based on quality, transparency, and sustainability. Let's choose to nourish ourselves and our communities with every bite. #BitcoinFood #SupportLocal #RealValue #SustainableFarming #CircularEconomy 🍃

Here's a fun crossover: restaurateurs have been playing the long game with fine wines long before Bitcoin hodling was a thing! Buying a quality vintage and letting it age in a cellar is like stacking sats. Over time, the value of the wine goes up as it matures and the supply dwindles. With Bitcoin, we have a similar effect; the fixed supply and lost keys make each remaining Bitcoin more precious as demand rises. Whether it’s quality wine in a cellar or Bitcoin in cold storage, the best results come when we protect, store, and give it time to reach its full value. 🏦 #BitcoinHodl #VintageWine #StoreOfValue #Scarcity #PatienceIsKey

The Bitcoin Food Manifesto
10-Preserving Traditional Skills
Before industrialization took over, food production was a craft. Traditional knowledge—like foraging, fermenting, and artisanal production—was valued and passed down through generations. Bitcoin Food isn’t just about bringing back old systems; it’s about preserving these skills and techniques that kept communities thriving for centuries. Fermenting, pickling, curing, aging—these methods not only enhance the flavor but also honor the hard work behind our food. Let’s celebrate the wisdom of the past and bring it into the future. #BitcoinFood #TraditionMeetsTech #FoodCraft

The Bitcoin Food Manifesto
9-Transparency and Accountability
Back in the day, you knew where your food came from and who grew it. That connection is gone now, but it doesn’t have to be. With Bitcoin, everything is transparent and accountable—and we can bring that same level of transparency to our food. Imagine knowing exactly who produced your food and how they did it. No more guessing what’s behind the label. Let’s make food honest again. #BitcoinFood #Transparency #KnowYourFarmer

The Bitcoin Food Manifesto
8-Resilient and Sustainable Food Systems
Local food systems used to be resilient—they adapted to the environment, they fed communities, and they didn’t rely on fragile, global supply chains. Today’s centralized food system can break down with just one crisis. But we can rebuild resilient, sustainable food systems using Bitcoin. By creating local production and peer-to-peer exchanges, communities can stay fed no matter what happens. A variety of products, more food security, and less dependence on big ag. Sounds like a plan, right? #BitcoinFood #Resilience #Sustainability

The Bitcoin Food Manifesto
7-Bitcoin Empowers Local Communities
Farmers are the backbone of any food system, but most of them are stuck in a system that barely pays them for their hard work. With Bitcoin, we can flip the script. Farmers get paid directly and fairly—no banks, no middlemen. By supporting Bitcoin Food, you’re not just buying better food; you’re empowering local farmers and keeping your money in the community. Let’s get back to supporting each other like we used to. #BitcoinFood #SupportLocal #FarmToTable

The Bitcoin Food Manifesto
6- Sovereignty Over Your Food
Before industrial farming took over, people had food sovereignty. They grew and ate what they needed, locally. With Bitcoin, we can return to that kind of food freedom. We don’t need big corporations or government-controlled systems telling us what to eat or how much to pay. When you pay for your food with Bitcoin, you’re supporting a system that values independence and real value. Take control of your food again. #FoodSovereignty #BitcoinFreedom

The Bitcoin Food Manifesto
5-Real Value for Real Food
Let’s be real: fiat food is just like fiat money—cheap, mass-produced, and lacking quality. It’s all about cutting corners and making a profit. But with #BitcoinFood, we’re talking about real, honest-to-goodness food. The kind that’s grown with care, traded fairly, and respected for the work that goes into it. Just like Bitcoin holds real value, our food should too. Time to bring that respect back to the table. #RealFood #BitcoinForGood

The Bitcoin Food Manifesto
4- Trustless Transactions for Real Food
Once upon a time, you trusted your local farmer because you knew them. Now? You have no clue where your food is coming from. With Bitcoin, we can bring back that old-school trust—without actually having to “trust.” It’s all about verifying, not trusting. You pay directly to the person growing your food, and that’s it. No middlemen, no nonsense. Just value for value. #BitcoinFood #Trustless #BackToBasics

The Bitcoin Food Manifesto
3- Circular Economies: Food as It Should Be
Remember when food didn’t travel thousands of miles to get to your table? When it was grown nearby and eaten locally? We can bring that back with Bitcoin! By keeping value within the community, farmers and consumers can work directly together to support each other. It’s about creating a circular economy where local food systems thrive again. Bitcoin is just the tool to make it even more efficient.

The Bitcoin Food Manifesto
2- Decentralize the food Food Supply
Centralized food systems are broken—they care more about profits than people. They push out small farmers and give us cheap, low-quality food. But just like Bitcoin, our food supply can be decentralized too. Imagine a world where your food comes from local farms, not corporate giants. Bitcoin lets us cut out the middlemen and go straight to the source, creating a transparent, decentralized food network. Let’s take back control of what’s on our plates. #BitcoinFood #DecentralizeEverything

1- Consumers Hold the Power:
Every time you spend money, you're casting a vote for the kind of world you want to live in. This is especially true with food. If we want real, sustainable food systems, we need to “vote” with our #Bitcoin. Every meal is a chance to shape the food economy we want. At first glance, food and money might seem like two totally different worlds. But when you dig a little deeper, you start to see how the Slow Food movement and Bitcoin have a lot in common. Both are all about valuing quality over quantity, focusing on community instead of centralization, and staying true to what really matters in a world that’s often all about speed and convenience.
The Slow Food movement got its start in 1986, in Italy, as a protest led by Carlo Petrini against the opening of a McDonald’s near the Spanish Steps in Rome. It wasn’t just about a burger joint—it was about protecting traditional Italian cuisine from being overshadowed by fast food culture. While the protest started in 1986, the movement officially became an organization in 1989, and since then, it’s gone global. The mission? To promote “good, clean, and fair food,” while protecting local traditions, supporting small farmers, and encouraging sustainable agriculture.
At the core of the Slow Food movement is the idea that food should be good, clean, and fair. Food should be good because it has to be tasty, made with quality ingredients, and nourishing. Food should be clean because it shouldn’t be packed with toxic agrochemicals or GMOs; it should be organic and natural. And food should be fair because the people who produce it deserve a fair share of the value for their hard work, while consumers should get to vote with their wallets for the kind of food they want to see more of. It’s not just about eating—it’s about enjoying each bite, knowing where it came from, and supporting your local producers.
In the same way, Bitcoin is about valuing sound money and treating each satoshi with the respect it deserves. Just like Slow Food encourages us to appreciate quality ingredients, Bitcoin teaches us to see the long-term potential of each piece of currency, valuing what’s real over what’s quick and mass-produced.
One of the coolest things about the Slow Food movement is how much it values community. It’s all about supporting local farmers, artisans, and producers, and building connections between the people who grow your food and the people who eat it. Bitcoin has a similar vibe—it’s about creating a decentralized financial system where people can connect directly, without needing a bank or any other middleman. Whether it’s supporting your local farmers’ market or attending a Bitcoin meetup, both movements are all about participation and getting involved at the grassroots level.
Bitcoin can take Slow Food’s ideas to the next level. Bitcoin has the power to create circular economies where food producers can directly sell their products to consumers, cutting out middlemen like banks and financial institutions. This allows the producers to get the fair value they deserve for their hard work and dedication—their "proof of work," if you will. In a system like this, the value stays within the community, benefiting both the producers and the consumers, and making sure that local economies thrive.
As a chef in Argentina, I've been part of the Slow Food movement since 2014. I have been involved in several community projects helping local farmers get in touch directly with their customers. One of these projects made a huge impact on me because it made me realize the power of circular economies and the importance of community. This particular project involved a community of goat farmers in Santiago del Estero, a province in northern Argentina. The farmers, mostly women, grew goats mainly to feed their families. With the extra milk, they started making cheese at a local factory. This was a huge deal because they could make extra money to support their families. By helping them connect directly with their customers and receiving fair value for their hard work, it made the whole endeavor very successful. So successful that they were able to build infrastructure around their town, such as an electric grid and a proper sewer system—things they didn’t have before. This was a perfect example of the power of food being fair. It shows the real impact on quality of life when farmers receive fair value for their time and energy.
Both Slow Food and Bitcoin put a big emphasis on authenticity and transparency. With Slow Food, you can trace your meal back to the farm, getting to know the people and processes that went into it. Bitcoin, on the other hand, operates on an open-source blockchain where anyone can verify transactions. In a world where so many things are hidden behind corporate walls—whether it’s how your food is made or how your money is handled—both movements push for openness and understanding. They want you to know your food, and they want you to know your money.
The Slow Food movement is basically the ultimate "slow down" in a world obsessed with fast food. It rejects the idea that everything has to be done quickly and instead promotes a thoughtful, slower approach to eating and food production. Bitcoin is kind of like that too, especially when it comes to the idea of "hodling"—holding onto Bitcoin for the long term rather than rushing to cash in when the market gets crazy. Both movements understand that good things take time. Just like it takes time to grow high-quality food, Bitcoin’s real value becomes more apparent as it grows and matures over time.
Both Slow Food and Bitcoin share a vision of a more sustainable future. Slow Food promotes farming practices that respect the land and encourage biodiversity. Similarly, Bitcoin offers a financial system that empowers individuals, freeing them from the constraints of centralized banking and inflation-prone fiat currencies. At their core, both movements are about creating something more lasting, something rooted in respect for people, the planet, and value itself.
In a world that’s all about quick fixes and instant gratification, the Slow Food movement and Bitcoin offer a refreshing reminder to slow down and focus on what really matters. Both movements encourage us to appreciate quality over quantity, build genuine connections, and support a more sustainable and fair future.
As I explore both these worlds, I’m finding they complement each other perfectly. Together, they offer a holistic approach to living—one that values food and finance in a meaningful way. Just like a great meal, combining Slow Food and Bitcoin creates a nourishing experience that celebrates the best of life. It’s all about savoring the journey, supporting real craftsmanship, and building a future that’s equitable and sustainable for everyone.
So, if you are a Bitcoiner I’m sure by now you must have heard the term “Fiat Food.” In my next post, I’m gonna dive into the differences between “Fiat Food” and “Bitcoin Food.” It’s gonna be a challenge because there is a lot to talk about on this topic, but I’ll give it a shot! Now, I have to go…
I’m at the office in my restaurant writing these lines, and I can hear the ticket printer in the kitchen going crazy!
Gotta go cook some Bitcoin food!

"Bitcoin and fermentation have more in common than you might think! 🧑‍🍳🍞 Both are slow, transformative processes that build resilience over time. Just like fermentation turns simple ingredients into rich, flavorful foods, Bitcoin grows quietly, expanding and strengthening its network with each new user. Both systems are decentralized, rely on time and patience, and yield powerful results when given the right conditions. The more variety of bacteria in fermentation, the richer and more resilient the result—just like in Bitcoin, where the more nodes, the stronger and more secure the network becomes. 🌱🪙 #Bitcoin #Fermentation #Decentralization #SlowAndSteady #Resilience #FoodAndCrypto #BitcoinNodes"

"Decentralization is key in both Bitcoin and the world of food. 🥦🔗 By sourcing ingredients directly from local farmers, we can create a food system that mirrors Bitcoin’s peer-to-peer structure. No middlemen, just authentic connections that honor the land and the people behind our meals. Let’s champion local producers and their stories! #BitcoinFood #LocalProvenance #Decentralization"

"Farm-to-table is about more than fresh food—it's about trusting the producer and building transparent supply chains that support circular economies. 🌱 When we know where our food comes from, we strengthen our communities and ensure sustainability. Bitcoin adds another layer of trust and transparency, empowering local economies with decentralized financial systems. Together, we can create resilient systems that benefit both farmers and consumers. 🥕🍽️ #FarmToTable #CircularEconomy #TransparentSupplyChains #Bitcoin #LocalEconomy #Sustainability #FoodSystems"

"As a chef and Bitcoiner, I’m starting to see the powerful intersection between food systems and Bitcoin. Both thrive on decentralization—local food networks empower communities, just like Bitcoin empowers individuals. Bitcoin Food is about creating sustainable, transparent food chains while leveraging Bitcoin to support local economies. 🌱🍽️ #BitcoinFood #Decentralization #Sustainability #LocalEconomy #Bitcoin #ChefLife"

I feel so lucky I found Bitcoin 3 years ago!!
Being from Argentina and watching the national currency loose value every week is hard because a lot of people are suffering the concecuences of hiperinflated Fiat money controled by corrupt polititians.
I can honestly say that the phrase 'Bitcoin is Hope' is as real as it gets!!
I really feel hopeful just by hodeling Bitcoin!
