I haven't had a lot of energy lately, but I did bake quite a few things! It's been years since I made a proper birthday cake, but I finally decided to try my hand at a vegan chocolate raspberry cake for my birthday. I was very happy with the result of the first trial version, but the second one was even better. Will definitely be making this again (and other cakes)... Also made some pistachio tartlets to offer some variety (because apparently some people don't like chocolate?) and a few days before that I baked jam biscuits with jam made by my dad from our own plums.
And as it was Sinterklaas last week, I had another reason to bake something... Tried out gevulde speculaas for the first time (a pastry with a mix of spices including cinnamon, filled with almond paste) and made some taaitaai (a very chewy anise-flavoured pastry). And now I am thinking about all the things I will bake for Christmas...

250,000 people (more than 1 percent of the entire Dutch population) marched through Amsterdam today to protest the genocide in Gaza. All lines have been crossed a long time ago, but still the Dutch government is not taking any serious action against Israel. And this while the Netherlands is the largest investor in Israel in the world!(!!!!)

Day 15-21 of walking to Santiago the Compostela from the Netherlands, during which I crossed most of Belgium . At this point I started to feel less like I was on a holiday and it started to feel more like a pilgrimage. Although I really wasn't that far from my home yet, walking everywhere really changes how you experience distances and I started to feel a bit lost. My first night in Belgium I stayed with parents of a friend of mine, but after that I really had no clear plan and had no idea when I would encounter any other pilgrims. As a result my mood wasn't the best, but I think it's one of those things you have to go through to know you'll be fine. And I was! Afterwards I definitely had a few moments where I struggled with certain things, but not quite like this week.
