Elon Musk’s xAI plans to power a new U.S. data center with a million AI GPUs, consuming up to 2 GW, equivalent to 1.9 million homes. To meet this demand, xAI is reportedly buying an overseas power plant and shipping it to the U.S. The current Colossus supercomputer in Memphis, with 200,000 Nvidia GPUs, already uses 300 MW. The new facility will require 1.4–1.96 GW, including overhead. Natural gas turbines are likely, as solar and nuclear options are less feasible. This move underscores the massive energy needs of advanced AI.

Yaupon Peach & Honey Tea Recipe
Ingredients:
- 2-3 ripe peaches
- 2 Tbsp yaupon tea or your choice of tea
- 2 Tbsp honey
- 6 cups water
Instructions:
1. Prepare the Peaches:
- Cut the peaches into small pieces and boil them with 2 cups of water on the stove for approximately 30 minutes. You'll know they're ready when the red pigment disappears from the peach skins.
2. Add Honey:
- Once the peaches are cooked, add the honey to the pot and stir until it dissolves completely.
3. Strain the Peaches:
- Separate the peaches using cheese cloth, squeezing out all the juice. Pour the hot peach liquid over the tea.
4. Steep the Tea:
- Let the tea steep for 10 minutes, then add 4 cups of water and ice.
5. Enjoy:
- Serve your homemade peach tea over ice. Enjoy this refreshing, from-scratch beverage!
Yaupon is native to Louisiana and is the only plant in North America that naturally contains caffeine.

Satsuma Marmalade
MAKES 2 QUART (2 L)
(About12 half pint jars)
-5 pounds satsumas or Seville -oranges, mandarins, or grapefruit
-2 lemon, zested and
quartered, seeds removed
-6 cups raw unrefined sugar
Peel the satsumas and cut the skin into strips about 4 inches long.
Separate the satsuma segments, remove any seeds, and coarsely chop them.
In a heavy-bottomed pot, combine the satsuma peels and 4 cups water and bring to a boil over medium-high heat. Reduce the heat to medium and simmer for 20 minutes, until the peels are soft, then add the satsuma segments, lemon zest, lemon quarters, and sugar and use a thermometer to check temp.
Bring the mixture back up to a boil over medium-high heat, stirring with a wooden spoon to ensure that the sugar dissolves. When the marmalade reaches 220°F (105°C), boil for 5 minutes, then check the marmalade's thickness and viscosity with what's called a plate test using pre chilled plates: Remove one of the plates from the freezer and drop 1 tablespoon of the marmalade onto it. Draw your fingertip through the marmalade: if the indentation stays put, without the marmalade immediately running back onto itself, it's done. If the marmalade is still runny. cook it for 5 minutes more, then repeat the plate test.
Turn off the heat and let the marmalade cool. Once cool, the marmalade can be transferred to sterilized jars and canned, refrigerated, or frozen.
The marmalade will keep in the refrigerator for up to 3 months and in the freezer for up to 1 year.
A great way to preserve the season and excellent topper for a cheese cake
