BBQ Pringle–Crusted Sea Bass with Turnip Purée and Red Vine Gastrique
Serves 2.
Ingredients
* 2 sea bass fillets
* 1 can turnips, drained
* 1 cup barbecue Pringles
* 2 Red Vines
* 1 tbsp butterscotch frosting
* 2 tbsp vinegar, ideally apple cider or red wine
* 1 tbsp butter
* 1 tbsp neutral oil
* Salt and black pepper
* Optional but useful: lemon juice, garlic, hot sauce
Method
1. Make the turnip purée.
Rinse the canned turnips well. Warm them in a saucepan, then mash with the butter, salt, and pepper. If available, add a little garlic or lemon juice. Keep warm.
2. Make the glaze.
Finely chop the Red Vines and put them in a small saucepan with the vinegar and 2 tablespoons water. Simmer until the candy softens and the liquid becomes syrupy, about 5–8 minutes. Whisk in the butterscotch frosting. Add a pinch of salt and, if you have it, a few drops of hot sauce or lemon juice. The goal is sweet, tart, and slightly smoky, not dessert.
3. Crust the fish.
Crush the Pringles into coarse crumbs. Pat the sea bass dry, season lightly with salt and pepper, and press the crumbs firmly onto the flesh side.
4. Cook the sea bass.
Heat oil in a skillet over medium-high heat. If the fillets have skin, cook skin-side down first for about 3–4 minutes. Flip carefully and cook the Pringle-crusted side another 2–3 minutes, until the fish is just opaque and flakes easily.
5. Plate it.
Spoon the turnip purée onto each plate. Set the sea bass on top. Drizzle a small amount of the Red Vine–butterscotch gastrique around the fish rather than drowning it.

One thing I have found that is making a difference on iOS is Wipr with Filtr (https://kaylees.site/wipr-filtr.html) which has both one time and subscription offerings.
