Vegan food experiment of the day. I bookmarked this a couple months ago and just now getting around to trying it. I made it during my lunch break so it's easy to make. I added some salt but otherwise didn't change any ingredients. After i made the base recipe I cooked some with taco seasoning and made tacos. Added a bit of coconut oil for fat. I recommend this recipe! I may end up adding some tempeh to it for protein. #Vegan #Cooking

Funny rural living story for the day. We've been having problems with the power blinking off for no apparent reason so I called the power company. A tech came out to make sure our lines are ok, he said a big problem is a horse down the street rubs on one of the power poles so hard it makes the power flicker. A few weeks ago the power went out for an extended period because the horse rammed the power pole and the transformer fell off! 😱

I'm tired. I spent today cooking an absurd amount of food to keep in the fridge/freezer so i don't eat crap for lunch during the week. The biggest success was vegan lasagna. I love cheese, and lasagna is one of my favorite things. I probably used to use two pounds of cheese and it was delicious. The vegan version has tofu ricotta that actually tastes like ricotta. I think with some additional experimenting I'll figure out a lasagna I like as much as the cheesy version. #Vegan #Cooking

One of my caving friends who I've known for over two decades and was an ally when we served on a nonprofit cave land trust board is going to die. He spent his adult life like I have, exploring caves and rappelling into deep pits and off cliffs. A month ago he fell ten feet off a scaffold at his home and has permanent brain damage. Medical dumbassery of the day. In September I got a bone density scan. I got a bill for what my insurance didn't cover, which was kinda pricey, and paid it. Yesterday I got a bill from that medical center for $108 with zero information about what it was for. When I called they said it was for the bone density scan. SEVEN MONTHS LATER. Someone I know in the cave exploration community who is about my age had a serious accident and is now in the hospital with a high deductible health insurance plan. Brunch today was a bust, the restaurant we wanted to go to had an 80 minute wait. 😳 We went to a Mexican restaurant across the street and it was great, vegetarian fajitas! Even though I'm trying to eat vegan as much as possible I thought hmmm maybe I'll get some cheese dip, but then I noticed a small bowl was $7.25. Nope. That used to be the price for an entire meal. Total for basic veggie fajitas: $23. This is why I rarely eat at restaurants anymore.

I have a question for fellow homeowners. So we're currently fighting with the tax assessor and my husband and I realized that nobody actually came by to look at our property/house. I figured they talked to him and he figured they talked to me. I just pulled up the full property description online and all sorts of stuff is wrong. So the cheap greenhouse I got back in March has been awesome. For the first time ever I managed to grow tomatoes, eggplant, and peppers from seed! I also started all my different squash varieties in it. I planted some of them during lunch today and finishing making some new big trellises for the vining stuff. Approximately 40 years after my first attempt, I finished reading Dune. 😁 I did enjoy it but can't say it's a favorite. I liked the movies more. I do know Frank Herbert wrote Dune Messiah because people didn't understand Paul wasn't the hero, and I can see that because I didn't think he was an antihero. The main message I got from the book is that a feudal monarchy is a terrible form of government. I am considering reading Dune Messiah, maybe I'll finish that one in less time. #Dune #Bookstodon

Seeing Alien in the theater was really fun. I actually don't think I'd ever seen it on a big screen before. It came out when I was 10 and I definitely wasn't allowed to see it 😆 It's hard to believe it was made 45 years ago, it didn't seem dated at all. The stupid Tyson factory farm contractor on my street has evidently finished catching and loading chickens into transport trucks for this six week cycle. The last couple evenings the stench has been disgusting outside. The chickens in his enclosed houses that have never seen daylight are now on trucks to slaughter seeing the only sunshine in their short lives. Factory farming, where all meat in the grocery store comes from, is inhumane and ruins rural communities like mine. #FactoryFarming

I just realized there are nine more months until the US presidential election. I don't know if I can stand seeing posts every day about why Trump is so awful and why I should vote for Biden. That wasn't even something I had to think about because its so obvious, no matter what awful things are going on in the world. I may have to either take a social media break or mute a lot of accounts. I tend to get sucked into political debates, which I used to enjoy, but now are 😱 #USPolitics

Currently 17 degrees outside and don't think it will get much warmer. Turned on our supplemental heat so the heat pump doesn't have to work so hard. I have a feeling there will soon be a ring of cats around it

My area in Tennessee is full of Trump and anti Biden flags. These people irritate me the most because they rotate flags with swear words. Now, I use this word all the time, but think it's totally inappropriate for a flag on a busy street. I imagine people with young kids passing by. "Grandma what does fuck mean?" I've seen these people, they're older than me. I'm tempted to send them a paper letter telling them to act like adults instead of children! No American flag in sight 🙄 #Trump #Seriously

Despite its beginning with invading Puritans, I'm glad America has the Thanksgiving holiday that's not tied to religion or gifts, just a day to hang out with friends and family and remember that there are always things to be thankful for. Question for artists here... my husband is an artist and we thought about setting up an account for him here to share his art with other people. We'd of course have his web address in his profile but wouldn't be obnoxious and ask people to buy stuff. My question is do artists find it helpful and fun to be here? I've heard that some get hassled for having accounts to promote a business and their art. Here's an example of what he does, drawn by hand with a pen. #Art #ArtistsOfMastodon #Artists
