Chicharron: An Easy Snack on Carnivore
As I’ve mentioned before, I have back issues—I suffer from Ankylosing Spondylitis. I spent over six years searching for the right diet, and I think I’ve finally found it. 50 days on the #Carnivore diet cleared up the inflammation in my neck that had been tormenting me for nearly a year. It really was a struggle—to the point where I was wondering what the point of living was if I had to live with that kind of pain.
But that’s a story for another day. Right now, I want to share a treat that’s easy and cheap to make while staying on the diet: Chicharron.
These are airy, crunchy snacks similar to nachos, made from pork skin (your butcher usually has plenty for pennies).
The Recipe:
* Boil: Throw the skin in a pot and boil for 1 hour.
* Clean: Scrape off all the fat. The skin should be translucent, not white.
* Dry: Cut into pieces and dry in the oven for 1–2 hours at 70–100°C.
* Puff: Turn the heat up to 220°C for 20–30 mins until golden brown.
* Finish: Salt them, let them cool, and enjoy!
Don't eat too many at once—they are very dry and will make your throat parched quickly.

Back pain sucks.
I’ve been suffering for 7 years. At times, it was hard to sleep, walk, sit, or even lie down. I tried veganism, carnivore, vegetarianism, starch-free and nightshade-free diets. I fasted—3 days dry, 21 days on a modified fast, and countless 36-hour fasts. I ran tons of tests. I went to massages, acupuncture, craniosacral therapy, osteopaths, and applied kinesiologists. I applied ointments. I took cold showers and went to saunas. I did breathing practices. I prayed. And only now am I starting to find a way out. I will be posting all my results here.
